I thought I would use up the food I had on hand. So I made these "chicken nuggets."
Chunks of chicken breasts were dredged in flour, then coated with eggs.
Next they were dragged through toasted Panko crumbs which were tossed with grated Romano cheese, salt, and a tablespoon of olive oil.
The nuggets were perched on a rack to dry.
Then they baked in a 450 degree oven for 12 minutes, turning once.
Then served with honey mustard. Cute.
Those are the best chicken nuggets I've ever seen.

ReplyDeleteI love that they are baked (I never fry) - I've been known to mix ground flax seeds and other ingredients into the coating, but i have the feeling that Roman would certainly appreciate a more pure version of the nugget (even though he will neverrrrrr be tasting the Mc Donalds version...well, not on my watch anyway)

DeleteNow, these are chicken nuggets I would actually eat. Fast food joints have given the very idea of these little morsels a bad name, but your version using good simple ingredients might just turn things around!
